  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 1 teaspoon baking powder

  • 1 cup extra virgin olive oil
  • 1 cup whole milk
  • 3 large eggs
  • 1 tablespoon lemon zest (from about 2 lemons)
  • 1/4 cup fresh lemon juice
  • Powdered sugar for dusting (optional)

Olive Oil Cake


  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the olive oil, milk, eggs, lemon zest, and lemon juice until well combined.
